Red & Green Bell Peppers

Green and red bell peppers are both varieties of the same plant, Capsicum annuum, but their color and flavor differences are noticeable.  

• Green bell peppers: These are harvested early, before they fully ripen. They have a slightly bitter taste and are lower in sweetness compared to their red counterparts. Green bell peppers are rich in vitamin C and antioxidants.   
• Red bell peppers: These are harvested later, after they have fully ripened on the plant. They are sweeter and have a more developed flavor than green bell peppers. Red bell peppers are also higher in antioxidants, including lycopene, which is associated with various health benefits. 

Both green and red bell peppers are versatile vegetables that can be used in a variety of dishes, such as salads, stir-fries, stuffed peppers, and soups.
